Im not aware of any list of descriptions of the payloads in Metasploit, so you will need to learn by example. Search for tutorials here and elsewhere on the Net, and maybe try the following.

What is Payload and how to use it.?
Hi, I know a little about the way of exploit.
1- Choosing the target to exploit.
2- Choosing the payload.
I completely know about the choosing and using of exploits.
But I don't know how to use payload.
I know a little about payload. Payload is run on the target machine after exploiting.
There are too many "Payload" in "Meta exploit".
I don't know which one to choose. And how they can affect to target machine.
Can any one explain me about the way of using each payload and how they can affect to target computer. Sorry for my complicated English.
