UNbetbootin grub problem (usb live persistant install)

I used the guide (which frankly seems a bit simple) to install BT to a USB stick.
After its done I want to edit the grub to always load persistant.

Usually this is done by having the menu.lst load 4 instead of 0 where it says default in the top.
4 being the 5. entry (counting 0 as the first). So far so good.

UNetbooting does NOT use the menu.lst file aparently.
It uses extlinux.conf file (located in the root of the usb stick)

Only problem is that though ive managed to alter the title of the UNetbooting menu to somthing else (proof of concept that its the right file im editing)
It will NOT load persistent.
It refuses to let me load the entry unless i pick it manually.
It also seems to not be persistent even if i manually pick that option.

(Or perhaps it IS actually loading the persistent version but still just wont save my settings.. such as changing the keyboard language and removing the install.sh script located on the desktop)

What am I doing wrong here ?

Kriss3d - did you follow all the steps in this HOW TO guide for installing persistent USB? Specifically, did you follow the instructions on creating and configuring the partitions and file systems, followed by installing grub? You didn't mention those steps in your original post. Your post lead me to believe you simply used Unetbootin to burn the ISO and then simply edited the menu.lst file. If that's the case, you missed quite a few steps.
