The answers could (and do) fit several books. If you're asking that, you're at the absolute bottom of a learning curve that probably looks like a cliff wall.
I'd suggest buying and reading "Build Your Own Security Lab" by Michael Gregg. ISBN 978-0-470-17986-4. It's a good primer on setting up a lab and how to go about the attacks on a lab, and will get you on your way.
