Its because GTK support for ettercap wasn't compiled when the compilation was done, see:

G mode is not working but TEXT mode is working .
The gui is available in Synaptic package manager. However, if you install ettercap-gtk then Synaptic will uninstall ettercap, ettercap-menu, and fasttrack.
I tried this myself, and, interestingly, ettercap-gtk and fast-track cannot co-exist together? Installing ettercap-gtk removes fasttrack, installing fasttrack removes ettercap-gtk
Have fast-track and ettercap been linked to eachother, with fasttrack using ettercap for it's mass exploit options? installing fasttrack also installed ettercap again.
