depending on the version of linux you are running, take a look at ipchains or iptables.
Backtrack actually has a firewall included in it which is called rc.fire wall and is not enabled by default. Its far from optimized but its a good start. Its based of iptables.
pfsense (what gromeo is talking about) is actually a freebsd distribution which is built as a firewall. In order for it to be effective you need a stand alone box to run it on.
