Have you tried to save the file to /tmp/name_of_file where name_of_file is the filename you want to give it? I don't know why this works, I don't use ettercap much, but just trying that let me save the file to /tmp. Sorry I can give no further information as to why it works like that, possibly someone else could shed light on this.

It does seem weird though that it will only read / write from that directory, cheers for you help though.

Maybe you're running ettercap with no one as the default user. You can try and change this setting to make root the default user. This should give ettercap access to root owned folders, in theory.

Ok, just tested the method I mentioned earlier, and as I predicted, it works (well, it's simple math). I was able to save hosts list in the /root folder.
